Big Thorn Farm and Brewery is a small-scale brewery located in Georgetown, Illinois, USA. It was founded by Anna Schweig and Aaron Young, who are also the owners. The couple started brewing beer in their Chicago apartment before deciding to move to a farm in downstate Illinois. They purchased the farm in 2012 and began the process of building their brewery.
The brewery officially opened in 2015. It is unique in that it is a grid-independent, wood-powered brewery. The farm and brewery are completely solar-powered, and all the beers are brewed with wood that is harvested from the farm. The brewing process is also unique in that it uses a wood-fired kettle, which is not common in the brewing industry.
Big Thorn Farm and Brewery grows many of its own ingredients, including hops, fruits, and honey. The beers are aged in oak barrels and are often flavored with ingredients grown on the farm. The brewery is also known for its sustainable practices, including composting and water conservation.
